Chef David Wilson has been most generous in sharing some of his favorite recipes with us. Enjoy preparing and eating these in your kitchen at home and then visit David's Seafood Grill & Catering some evening when you don't feel like cooking. Ceviche de Camarones (Shrimp Ceviche) One 14 oz. bottle of Heinz Ketchup 4 cups orange juice, with pulp 1/2 cup lemon juice 2 tsp LA Hot Sauce (or to taste) 2 TBSP Lea & Perrins Worcestershire Sauce 1/2 cup granulated sugar 1 tsp salt 2 medium red onions, slice very thin and marinated (see below) 1 1/2 lbs. medium boiled shrimp, each cut into 2/3 pieces To marinate red onions, wash them in hot water, drain and allow them to cool to room temperature in a medium-sized bowl. Next add a third of the lemon juice and a third of the salt. Toss the onions well and then wash as before. Do this procedure two more times. (It will remove the strong flavor from the onions.) After the last washing, allow the onions to cool and then mix them with the remaining ingredients. Use some of the onions as a garnish. To serve: place about 3/4 of the mixture in an appropriately-sized bowl and top with about 1/2 cup freshly-popped popcorn. Unique and delicious! The following recipe is a Wilson family favorite . . .
Mimi's Apple Cake 5 red Delicious Apples 3 cups flour 2 cups plus 5 tsp granulated sugar 2 tsp cinnamon 4 eggs 1 cup canola oil 1/4 cup orange juice 2 tsp baking powder 1 tsp salt 2 1/2 tsp vanilla Core and pare the five apples. Cut into thin slices. Cut each slice in app. 3/4 in pieces. Place apple pieces into a 3 qt. bowl and sprinkle with 5 tsp sugar and the cinnamon. Stir to make sure that the pieces are evenly coated. Set aside. Pour the remaining ingredients into a mixing bowl and beat until smooth. Pour half of the batter into a greased, floured tube pan. Sprinkle with half of the apple mixture. Pour the remaining batter over the layer of apples, then evenly distribute the remaining apple pieces over the batter. Bake in 350 F oven for 1 1/2 hours. Allow to cool completely before removing from pan. |
